Instructions
- In a large skillet or Dutch oven, heat the vegetable oil over medium heat. Add the sliced sausage and cook for 3-4 minutes until browned. Remove the sausage from the skillet and set aside.
- In the same skillet, add the chicken breast pieces and cook until lightly browned on all sides, about 5 minutes. Remove the chicken from the skillet and set aside with the sausage.
- In the same skillet, add the diced onion, bell pepper, celery, and minced garlic. Sauté for 3-4 minutes until the vegetables have softened.
- Add the Cajun seasoning, dried thyme, paprika, and cayenne pepper (if using) to the skillet. Stir well to coat the vegetables with the spices.
- Add the rice, diced tomatoes (with their juices), chicken broth, bay leaf, salt, and pepper to the skillet. Stir everything together, then bring the mixture to a boil.
- Reduce the heat to low, cover the skillet, and simmer for 15-18 minutes until the rice is tender and has absorbed the liquid.
- Remove the bay leaf and stir in the cooked sausage and chicken. Cook for an additional 2-3 minutes until heated through.
- Serve the Jambalaya hot, garnished with chopped fresh parsley.
