What sets it apart is the delicious blend of ingredients, including juicy chicken, crisp vegetables, and a creamy dressing that coats every bite. Ingredients

  • 2 cups cooked chicken, shredded or diced
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 2 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • 1/4 cup finely chopped celery
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the mayonnaise, Greek yogurt, lemon juice, Dijon mustard, salt, and pepper. Whisk together until well blended and smooth.
  2. Add the cooked chicken, celery, red onion, and fresh parsley to the bowl. Mix well, ensuring the chicken is evenly coated with the creamy dressing.
  3. Taste the chicken salad and adjust the seasoning if needed by adding more salt, pepper, or lemon juice according to your preference.

Notes

For the chicken, you can use leftover cooked chicken or quickly cook boneless, skinless chicken breasts in a skillet with a little olive oil until cooked through.
