- Yield: 4 servings 1x
Ingredients
- 8 ounces beef sirloin or flank steak, thinly sliced
- 8 ounces lo mein noodles, cooked according to package instructions
- 1 cup sliced carrots
- 1 cup sliced mushrooms
- 1 cup trimmed green beans
- 1 onion, thinly sliced
- 2 baby bok choy, chopped
- 3 cloves garlic, minced
- 1 tablespoon vegetable oil
- 1/4 cup soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon brown sugar
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1/2 cup beef broth or water
- 2 green onions, sliced (for garnish)
- Sesame seeds (for garnish)
Instructions
- In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the thinly sliced beef and stir-fry for 2-3 minutes until it’s browned and cooked to your desired level of doneness. Remove the beef from the skillet and set it aside.
- In the same skillet, add the sliced carrots, mushrooms, and green beans. Stir-fry for 3-4 minutes until the vegetables are slightly tender.
- Add the sliced onion and halved baby bok choy to the skillet. Continue stir-frying for another 2 minutes until the bok choy is wilted and the onion is translucent.
- Lower the heat to medium-low, then add the minced garlic to the skillet. Stir-fry for 1 minute until fragrant, being careful not to burn the garlic.
- In a small bowl, whisk together the soy sauce, oyster sauce, brown sugar, rice vinegar, sesame oil, and beef broth or water. Pour the sauce over the vegetables and bring it to a simmer.
- Add the cooked noodles and the reserved beef to the skillet. Toss everything together until the noodles and beef are coated with the delicious sauce and the vegetables are evenly distributed.
- Serve the dish hot, garnished with sliced green onions and sesame seeds for an extra burst of flavor and crunch.
Notes
For a vegetarian option, you can replace the beef with tofu or tempeh and use vegetable broth instead of beef broth. Feel free to adjust the vegetables according to your taste and what you have on hand. Bell peppers, snow peas, or broccoli would also work well in this dish. For an extra kick of heat, add a sprinkle of red pepper flakes or a drizzle of sriracha sauce to the noodles. This dish pairs beautifully with a side of steamed edamame or a refreshing cucumber salad. Enjoy!
