This super delicious recipe combines the classic comfort of spaghetti with crispy bacon, perfectly poached eggs, and the sweetness of golden raisins. The marriage of savory and sweet — as the salty bacon and creamy poached eggs contrast with the subtle sweetness of the golden raisins — truly makes this dish unique. Plus, it’s incredibly easy to put together, making it the perfect go-to meal when you want something scrumptious and quick!

  • Total Time: 35 minutes
  • Yield: 4 servings 1x

Ingredients

Units Scale
  • 8 oz (225g) spaghetti
  • 6 slices of bacon, chopped
  • 4 large eggs
  • 1/4 cup golden raisins
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional, for a hint of spice)
  • Salt and black pepper, to taste
  • Freshly grated Parmesan cheese, for serving
  • Fresh parsley or basil, chopped, for garnish

Instructions

  1. Cook the spaghetti according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, cook the chopped bacon over medium heat until it becomes crispy and golden. Remove the bacon from the skillet and place it on a plate lined with a paper towel to drain excess oil.
  3. In the same skillet, add olive oil and minced garlic. Sauté for about 1 minute until the garlic becomes fragrant.
  4. Add the golden raisins to the skillet and sauté them for an additional 1-2 minutes until they become plump and slightly caramelized.
  5. Return the cooked bacon to the skillet and toss it with the raisins and garlic. Season with salt, black pepper, and red pepper flakes (if using).
  6. Divide the cooked spaghetti into four serving plates or bowls.
  7. Carefully poach the eggs: Bring a pot of water to a gentle simmer and add a splash of vinegar. Create a gentle whirlpool in the water and carefully crack an egg into the center of the whirlpool. Poach each egg for about 3-4 minutes until the whites are set but the yolk is still runny. Remove each poached egg with a slotted spoon and place one on top of each plate of spaghetti.
  8. Garnish with freshly grated Parmesan cheese and chopped herbs.

Notes

To achieve perfectly poached eggs, use fresh eggs and create a gentle whirlpool in the simmering water before adding each egg. The whirlpool helps the egg white wrap around the yolk, creating a neat poached egg. Feel free to enhance the flavors by adding sautéed mushrooms, baby spinach, or roasted cherry tomatoes to the spaghetti. Enjoy!

Chef’s tip: This dish pairs wonderfully with a simple green salad dressed with balsamic vinaigrette.
