Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 cup broccoli florets
  • 1 red bell pepper, cut into strips
  • 1 green bell pepper, cut into strips
  • 1 large carrot, thinly sliced
  • 1 small onion, thinly sliced
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 2 tablespoons ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • Sesame seeds and chopped green onions for garnish (optional)
  • Cooked rice for serving
  • Red pepper flakes (optional) to taste

Instructions

  1. In a small bowl, whisk together the soy sauce, rice vinegar, ketchup, brown sugar, and cornstarch to make the sweet and sour sauce. Set it aside.
  2. In a large skillet or wok, heat one tablespoon of vegetable oil over medium-high heat. Add the shrimp and cook for about 1-2 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set them aside.
  3. In the same skillet, add the remaining tablespoon of vegetable oil. Stir in the minced garlic, sliced onion, and sliced carrot. Cook for 2-3 minutes until the vegetables start to soften.
  4. Add the broccoli, red and green bell peppers to the skillet and continue to cook for an additional 2-3 minutes until the vegetables are tender-crisp.
  5. Return the cooked shrimp to the skillet and pour the sweet and sour sauce over the ingredients. Toss everything together to coat evenly and let the sauce thicken for 1-2 minutes. If using red pepper flakes, add them in now to taste.
  6. Remove the skillet from the heat and garnish the Sweet and Sour Shrimp Stir-Fry with sesame seeds and chopped green onions, if desired.
  7. Serve the stir-fry over cooked rice and enjoy the explosion of flavors!

Notes

Feel free to add or substitute other favorite vegetables such as snap peas, baby corn, or water chestnuts if you’d like some customizations. You are also welcome to adjust the level of sugar based on your preferences. Do make sure to cook the shrimp properly: Overcooked shrimp can become tough and rubbery so you’re looking for them just to turn pink and opaque.
