  • Cook Time: 30 minutes
  • Total Time: 35-40 minutes
  • Yield: 4 servings 1x

Ingredients

Units Scale
  • 1 pound ripe tomatoes, halved
  • 1 head of garlic, top sliced off to expose the cloves
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 4 cups vegetable or chicken broth
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1/2 cup heavy cream or coconut cream (for a dairy-free option)
  • Salt and pepper to taste
  • Fresh basil leaves for garnish
  • Croutons for serving

Instructions

  1. Preheat your oven to 400°F (200°C). Place the halved tomatoes on a baking sheet, drizzle with olive oil, and sprinkle with salt and pepper. On the same baking sheet, place the garlic head, drizzle with olive oil, and wrap it loosely in aluminum foil. Roast the tomatoes and garlic in the preheated oven for about 20 minutes, or until the tomatoes are soft and slightly caramelized, and the garlic is tender and golden.
  2. In a large pot over medium heat, sauté the diced onion, carrot, and celery in olive oil until softened and translucent, about 5 minutes.
  3. Squeeze the roasted garlic cloves from the head and add them to the pot along with the roasted tomatoes. Stir in the vegetable or chicken broth, dried thyme, and bay leaf. Bring the mixture to a simmer and let it cook for 10 minutes to allow the flavors to meld together.
  4. Remove the bay leaf, and using an immersion blender or a regular blender, puree the soup until smooth and creamy.
  5. Return the soup to low heat and stir in the heavy cream or coconut cream, adding salt and pepper to taste. Simmer for an additional 5 minutes, allowing the flavors to come together.
  6. Serve with croutons, fresh basil leaves, or a touch of cream and enjoy!

Notes

For an extra burst of flavor, add a splash of balsamic vinegar or a pinch of red pepper flakes while sautéing the vegetables. Feel free to customize the consistency by adjusting the amount of broth or cream according to your preference. This soup pairs beautifully with a side of crusty bread or a simple green salad for a complete meal. Enjoy!
