- Yield: 4 sandwiches 1x
Ingredients
- 2 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1 tbsp olive oil
- 1/2 cup ranch dressing
- 1/2 cup chopped cooked bacon
- 1/4 cup chopped green onions
- 1/4 cup chopped fresh parsley

- Lettuce and tomato, for serving
Instructions
- Preheat a grill or grill pan to medium-high heat. Season the chicken breasts with salt and pepper.
- Drizzle olive oil over the chicken breasts and grill for 6-8 minutes on each side, or until fully cooked. Set aside to cool.
- In a mixing bowl, combine the ranch dressing, chopped bacon, green onions, and parsley. Mix well.
- Once the chicken is cooled, chop it into small pieces and add it to the mixing bowl. Mix well to combine.
- Toast the bread slices and assemble the sandwiches by spreading the chicken mixture on one side of the bread and topping with lettuce and tomato. Serve immediately.
Notes
For an extra kick of flavor, try adding a pinch of garlic powder or red pepper flakes to the chicken mixture. To make this recipe even quicker, use pre-cooked chicken, store-bought bacon bits, and pre-washed lettuce. And if you want a lighter option, try swapping in turkey bacon and using lettuce wraps instead of bread. Enjoy!
