  • Yield: 6 servings 1x

Ingredients

Units Scale
  • 1 pound ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 can (15 ounces) chili beans, undrained
  • 1 can (8 ounces) tomato sauce
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 3 cups Fritos corn chips
  • 1 cup shredded cheddar cheese
  • 1 cup diced tomatoes
  • 1/2 cup sliced black olives
  • 1 jalapeno, thinly sliced

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, cook the ground beef, onion, and garlic over medium heat until the beef is browned and the onion is softened. This should take about 5 minutes. Drain any excess fat.
  3. Add the chili beans, tomato sauce, chili powder, cumin, salt, and pepper to the skillet. Stir well to combine and simmer for 5 minutes to allow the flavors to meld together.
  4. In a 9×13-inch baking dish, spread half of the Fritos corn chips evenly on the bottom. Top with half of the chili mixture, spreading it out to cover the chips.
  5. Repeat the layering process with the remaining Fritos and chili.
  6. Sprinkle the shredded cheddar cheese evenly over the top of the casserole.
  7. Bake in the preheated oven for 15 minutes, or until the cheese is melted and bubbly.
  8. Remove the casserole from the oven and let it cool for a few minutes.
  9. Garnish with diced tomatoes, sliced black olives, and jalapeno slices.
  10. Serve the baked Frito pie warm and enjoy!

Notes

Feel free to customize with your favorite toppings including sliced avocado, sour cream, or chopped green onions. For an extra kick of heat, you can include some hot sauce or sprinkle red pepper flakes on top. If you prefer a milder version, you can omit the jalapenos or remove the seeds before slicing them. To make this dish even heartier, you can add a layer of refried beans between the chili and Fritos. Enjoy!
