For the pulled pork:

  • 34 pounds boneless pork shoulder
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 1 cup BBQ sauce
  • 1/2 cup chicken broth
  • 2 tablespoons brown sugar
  • 1 tablespoon smoked paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste

For the coleslaw:

  • 4 cups shredded cabbage (green and purple)
  • 1 carrot, grated
  • 1/2 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Slider buns, for serving

Instructions

  1. Place the sliced onions and minced garlic in the bottom of your slow cooker.
  2. In a bowl, mix together BBQ sauce, chicken broth, brown sugar, smoked paprika, cumin, salt, and pepper.
  3. Place the pork shoulder on top of the onions in the slow cooker.
  4. Pour the BBQ sauce mixture over the pork.
  5. Cover and cook on low for 8-10 hours or until the pork is tender and can be easily shredded with a fork.
  6. Remove the pork from the slow cooker and shred it using two forks.
  7. Skim any excess fat from the cooking liquid.
  8. Return the shredded pork to the slow cooker and mix it with the cooking liquid. Keep warm until ready to serve.
  9. An hour or so before you’re ready to serve the sliders, begin prepping the coleslaw.
  10. In a large bowl, combine shredded cabbage and grated carrot.
  11. In a separate bowl, whisk together mayonnaise, apple cider vinegar, honey, Dijon mustard, salt, and pepper.
  12. Pour the dressing over the cabbage mixture and toss until well coated. Refrigerate until ready to use.
  13. To assemble your sandwiches, slice the mini slider buns in half and lightly toast them if desired.
  14. Place a generous portion of pulled pork on the bottom half of each slider bun.
  15. Top with a spoonful of coleslaw.
  16. Place the top half of the bun on the coleslaw to complete the slider.
