  • Prep Time: 5-10 minutes
  • Cook Time: 25 minutes
  • Total Time: 30-35 minutes
  • Yield: 4 servings 1x

Ingredients

Units Scale
  • 8 ounces Campanelle pasta (or any pasta of your choice)
  • 4 bratwurst sausages
  • 2 cups chopped kale leaves, stems removed
  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. Cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet or pan, heat the olive oil over medium heat. Add the bratwurst and cook until browned and cooked through, about 5-7 minutes.
  3. Remove bratwurst from skillet and slice into rounds.
  4. Return bratwurst to pan and add the minced garlic and red pepper flakes to the skillet, stirring for about 1 minute until fragrant.
  5. Add the chopped kale leaves to the skillet and cook until wilted, about 2 minutes. Stir in the cherry tomatoes and cook for an additional minute until they soften slightly.
  6. Add the cooked pasta to the skillet with the bratwurst, kale, and cherry tomatoes. Toss everything together until well combined. Season with salt and pepper to taste.

Notes

For an extra burst of flavor, you can add a splash of white wine or chicken broth to the skillet after cooking the bratwurst. Don’t overcook the kale to retain its vibrant color and texture. It should be tender but still have a slight bite. Feel free to customize the dish by adding other vegetables such as bell peppers or onions. Adjust the level of spiciness to your preference by adding more or less red pepper flakes. Serve the pasta with a sprinkle of grated Parmesan cheese for an additional savory touch. Enjoy!
