  • Yield: 2 servings 1x

Ingredients

Units Scale
  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 cup pineapple chunks (fresh or canned)
  • 1 red bell pepper, thinly sliced
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 2 tablespoons ketchup
  • 1 tablespoon brown sugar
  • 1 tablespoon lime juice
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon cayenne pepper (adjust to your spice preference)
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil
  • Cooked rice, for serving
  • Fresh herbs, for garnish (optional)
  • Sesame seeds, for garnish (optional)

Instructions

  1. In a small bowl, whisk together the soy sauce, ketchup, brown sugar, lime juice, ground ginger, ground allspice, cayenne pepper, salt, and pepper to make the sauce. Set aside.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the sliced bell pepper, onion, and minced garlic. Sauté for about 3-4 minutes until the vegetables are tender-crisp.
  4. Return the cooked chicken to the skillet and add the pineapple chunks.
  5. Pour the prepared sauce over the chicken and pineapple. Stir well to coat everything in the sauce. Cook for an additional 2-3 minutes until the sauce is heated through and the flavors meld together.
  6. Serve the Caribbean-style chicken over a bed of cooked rice. Garnish with fresh herbs and sesame seeds, if desired.

Notes

For an extra burst of flavor, marinate the chicken in the sauce for about 30 minutes before cooking. Adjust the level of spiciness by adding more or less cayenne pepper according to your preference. Feel free to customize the dish by adding additional vegetables like sliced carrots, snow peas, or zucchini. Serve the Caribbean-style chicken over a bed of fluffy white or brown rice to soak up the delicious sauce. To enhance the tropical vibes, garnish the dish with fresh herbs and serve with a side of grilled plantains or a refreshing mango salsa. Enjoy!
