Ingredients
- 1 large eggplant, diced
- 2 medium zucchinis, sliced into rounds
- 3 ripe tomatoes, sliced in rounds
- 1 large onion, thinly sliced
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1/4 cup fresh basil leaves, chopped
- 3 tablespoons olive oil
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- Grated Parmesan cheese (optional, for serving)
Instructions
- In a cast iron pan, warm 2 tablespoons of olive oil over medium heat.
- Add the thinly sliced onions and cook until they become translucent, about 3 minutes.
- Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
- Begin by layering half of the eggplant, zucchini, and tomatoes on top of the sautéed onions and garlic.
- Sprinkle with half of the chopped basil and thyme.
- Drizzle with 1 tablespoon of olive oil and season with salt and pepper.
- Add the remaining vegetables, basil, thyme, and another drizzle of olive oil.
- Season with salt and pepper again.
- Cover the cast iron pan with a lid and let the ratatouille simmer over medium-low heat for about 20 minutes or until the vegetables are tender and infused with flavor.
- Once cooked, remove from heat and serve the ratatouille hot.
- Optionally, top with grated Parmesan cheese for an extra layer of savory goodness.
