  • Total Time: 30 minutes
  • Yield: 4 servings 1x

Ingredients

Units Scale
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup frozen peas and carrots
  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until fragrant and translucent, about 3-4 minutes.
  2. Add the chicken pieces to the skillet and cook until they are browned and cooked through, approximately 6-8 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the frozen peas and carrots. Sauté for a few minutes until they are heated through.
  4. Sprinkle the flour over the vegetables and stir well to coat. Cook for 1-2 minutes to cook off the raw flour taste.
  5. Slowly pour in the chicken broth while stirring continuously to avoid lumps. Add the heavy cream and dried thyme, stirring until the sauce thickens.
  6. Return the cooked chicken to the skillet and stir well to combine. Simmer for another 2-3 minutes to let the flavors meld together. Season with salt and pepper to taste.
  7. Remove from heat and garnish with fresh parsley.

Notes

For extra flavor, you can add a splash of white wine or a squeeze of lemon juice to the sauce. Feel free to customize the vegetables based on your preference. You can add mushrooms, bell peppers, or even asparagus for added variety and color. Serve the Chicken à la King over buttered noodles, rice, or toasted bread for a satisfying meal. Leftovers can be refrigerated and reheated the next day. Simply warm it up on the stove over low heat, adding a splash of chicken broth or cream to refresh the sauce if needed.
