Chicken Caprese sandwiches are a delightful and refreshing meal, perfect for a quick lunch or dinner. The sandwich is made with tender grilled chicken, juicy tomatoes, fresh basil leaves, and creamy mozzarella cheese, all nestled between two slices of bread. Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 4 slices of bread
  • 2 tablespoons balsamic vinegar
  • 4 slices of fresh mozzarella cheese
  • 1 large tomato, sliced
  • Fresh basil leaves

Instructions

  1. Preheat a grill pan or skillet over medium-high heat.
  2. Season the chicken breasts with garlic powder, salt, and pepper.
  3. Add the olive oil to the pan and place the chicken on the pan. Cook for about 6-7 minutes per side, or until fully cooked through.
  4. While the chicken is cooking, drizzle the balsamic vinegar over the slices of bread.
  5. When the chicken is done, remove it from the pan and let it rest for a few minutes. Then, slice it into thin pieces.
  6. Assemble the sandwiches by placing a slice of mozzarella cheese on each piece of bread. Then, add the sliced chicken, tomato slices, and basil leaves on top of the cheese.
  7. Top with the other slice of bread and enjoy!

Notes

Feel free to experiment with extra toppings such as avocado or bacon. You can also play around with different types of bread (my favorites are ciabatta and sourdough). To save time, you can use pre-cooked chicken, or even leftover chicken from a previous meal. This sandwich also works well as a wrap or panini, so don’t be afraid to get creative with how you serve it!
