Ingredients

Units Scale
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup sliced almonds

Instructions

  1. Preheat the oven (5 minutes): Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
  2. Prepare the cookie dough (10 minutes): In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar together until light and fluffy. Beat in the egg, vanilla extract, and almond extract until well combined.
  3. Combine the dry ingredients (5 minutes): In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  4. Shape the cookies (5 minutes): Using a tablespoon or cookie scoop, drop balls of dough onto the prepared baking sheets, spacing them about 2 inches apart. Flatten each ball slightly with the back of a spoon or your fingers.
  5. Add the almonds (3 minutes): Press a few sliced almonds onto the top of each cookie.
  6. Bake the cookies (10-12 minutes): Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown and the centers are set. Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
