Corned beef and cabbage is a beloved classic dish known for its hearty and comforting flavors. Typically served around St. Patrick’s Day (but honestly delicious any time of year), this dish is loved for its simplicity and the way it brings together the savory saltiness of the beef with the mild sweetness of the cabbage. While traditionally it takes a bit longer to prepare, we’ll be doing a quick and tasty version today that’ll be ready in just 30 minutes. Let’s begin!
- Prep Time: 10 minutes
- Cook Time: 20 minutes
- Total Time: 30 minutes
- Yield: 4 servings 1x
Ingredients
- 1 pound corned beef brisket
- 1 small head of cabbage, thinly sliced
- 4 medium potatoes, peeled and cubed
- 2 carrots, peeled and sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- 4 cups water
- Salt to taste
Instructions
- In a large pot, combine the corned beef brisket, water, onion, garlic, black pepper, thyme, and parsley. Bring to a boil over medium-high heat.
- Reduce the heat to low, cover the pot, and let it simmer for 15 minutes.
- Add the potatoes and carrots to the pot, cover, and continue to simmer for another 10 minutes.
- Finally, add the sliced cabbage to the pot, cover, and cook for an additional 5 minutes or until the cabbage is tender.
- Remove the corned beef from the pot and slice it against the grain. Serve the corned beef slices with the cooked cabbage, potatoes, and carrots.
Notes
For best results, opt for a well-marbled brisket cut labeled “point cut” or “flat cut” which will be more tender. Keep in mind that the point cut tends to be fattier and more succulent, while the flat cut is a bit leaner. When slicing, sure to cut the corned beef against the grain for maximum tenderness and don’t overcook the vegetables to maintain their texture and vibrant colors. Feel free to add your own twist by incorporating additional spices or herbs to suit your taste preferences. Enjoy!
