  • 10 corn tortillas
  • 1 can (15 oz) pinto beans, drained and rinsed

  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 cup sour cream
  • 1 cup shredded Mexican blend cheese
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and black pepper to taste
  • Fresh cilantro, for garnish
  • Vegetables for serving (green beans, broccoli, etc)

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a baking dish with cooking spray or a bit of oil.
  2. In a large skillet over medium heat, cook the ground beef until it’s browned and cooked through. Drain any excess fat.
  3. Add the chili powder, cumin, salt, and black pepper to the cooked ground beef. Stir well to evenly coat the beef with the spices.
  4. In a mixing bowl, combine the seasoned ground beef, pinto beans, sliced black olives, corn kernels, and diced tomatoes. Mix well to create the flavorful fiesta filling.
  5. Lay 5 corn tortillas at the bottom of the greased baking dish, slightly overlapping to cover the surface.
  6. Spread half of the fiesta filling over the corn tortillas, ensuring an even layer.
  7. Dollop half of the sour cream on top of the fiesta filling and spread it gently.
  8. Sprinkle half of the shredded Mexican blend cheese over the sour cream.
  9. Repeat the layers with the remaining corn tortillas, fiesta filling, sour cream, and shredded cheese.
  10. Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
  11. Remove the foil and bake for an additional 5-7 minutes until the cheese is bubbly and slightly golden.
  12. Garnish with fresh cilantro before serving.
