Tender chicken thighs are coated in a luscious honey mustard glaze, then roasted to perfection alongside vibrant red peppers, which are gently charred to bring out their natural sweetness. As the dish comes together, we’ll also take the time to toast some sliced almonds, adding a delightful crunch and nutty aroma. To finish, we’ll garnish with fresh parsley, lending a burst of freshness to the dish. The combination of these ingredients creates a delicious balance of sweet, tangy, smoky, and crunchy elements that’s hard to resist!

  • Yield: 4 servings 1x

Ingredients

Units Scale
  • 4 boneless, skinless chicken thighs
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/4 cup sliced almonds
  • 2 red bell peppers, roasted, peeled, and sliced
  • Fresh parsley leaves, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a small bowl, whisk together the Dijon mustard, honey, olive oil, salt, and pepper until well combined.
  3. Place the chicken thighs on a baking sheet lined with parchment paper. Brush the honey mustard mixture evenly over each chicken thigh.
  4. Sprinkle the sliced almonds over the chicken thighs, pressing them gently to adhere.
  5. Arrange the roasted red pepper slices around the chicken on the baking sheet.
  6. Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the almonds are golden brown.
  7. Remove the baking sheet from the oven and let the chicken rest for a few minutes.
  8. Transfer the chicken thighs to a serving platter and garnish with fresh parsley.
  9. Serve the honey mustard chicken thighs with the roasted red peppers and toasted sliced almonds.

Notes

For the best results, make sure to adjust the cooking time based on the thickness of your chicken thighs to ensure they are cooked through. You can often buy roasted red peppers at the grocery store but preparing them at home is super easy, too. Just cut them in half, remove the seeds, and drizzle some olive oil on top. Put them in the oven at 400 degrees for 30 minutes or until the skin begins to blister. You can pair this delicious dish with a side of steamed vegetables or a fresh salad to complement the flavors. Enjoy!
