Ingredients

Units Scale
  • 4 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup hot sauce
  • 1/4 cup honey
  • 2 tablespoons unsalted butter
  • 4 hamburger buns
  • 1 cup coleslaw mix
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon mayonnaise
  • Dill pickles for serving
  • Salt and pepper, to taste

Instructions

  1. In a shallow dish, mix together the flour, paprika, salt, and black pepper.
  2. Coat each chicken breast in the flour mixture and shake off any excess.
  3. In a large skillet over medium-high heat, heat 2 tablespoons of oil. Cook the chicken for 5-6 minutes on each side or until golden brown and cooked through.
  4. In a small saucepan, combine the hot sauce, honey, and butter. Cook over medium heat for 2-3 minutes, stirring occasionally, until the butter is melted and the sauce is smooth.
  5. In a medium bowl, combine the coleslaw mix, apple cider vinegar, mayonnaise, salt, and pepper.
  6. To assemble the sandwich, place a chicken breast on the bottom half of each hamburger bun. Drizzle the hot honey sauce over the chicken and top with coleslaw and pickles. Cover with the top half of the bun.
  7. Serve immediately.

Notes

For extra tender chicken, consider marinating the chicken in buttermilk for a few hours before cooking. You can also adjust the amount of hot sauce in the honey sauce to your liking. Don’t forget to butter and toast the buns before assembling the sandwich to give it a nice crunch. Serve with a side of fries or a salad to make it a complete meal. Enjoy!

Baked Potato Wedges with Rosemary

Start by taking some hearty potatoes and cutting them into chunky wedges, ensuring each piece has a good mix of skin and fluffy interior. In a mixing bowl, toss those wedges with a generous glug of olive oil, ensuring each wedge is well-coated and gleaming. Now, sprinkle freshly chopped rosemary over them, letting the fragrant herb cling to the oily surface. A pinch of sea salt and a crack of black pepper complete the seasoning. Spread the wedges out on a baking tray, giving each its own space to crisp up. Pop them into a preheated oven and bake until they're golden, crispy on the outside, and irresistibly fluffy inside.

Beet and Carrot Slaw

Start by peeling and grating fresh beets and carrots. For the red cabbage, finely slice it to get those lovely thin shreds. In a large mixing bowl, combine your beets, carrots, and red cabbage. Now, let's whip up a simple dressing. In a small bowl, whisk together some olive oil, apple cider vinegar, a touch of honey or maple syrup for sweetness, and a dash of salt and pepper. Pour this dressing over the veggies, and toss everything well to coat. If you like a bit of an aromatic touch, add a sprinkle of chopped fresh dill or parsley. Let the slaw sit for at least 30 minutes to meld the flavors together.

Kale Chips with Chili Flakes

Start by selecting a fresh bunch of kale, washing and thoroughly drying the leaves. Tear them into chip-sized pieces, discarding the tough central stems. In a large mixing bowl, drizzle the kale with olive oil, ensuring each piece is lightly coated. Sprinkle in those fiery chili flakes, adjusting to your heat preference. Give everything a good toss to distribute the flavors evenly. Lay out the seasoned kale pieces on a baking sheet, ensuring they aren't overlapping. Into a preheated oven they go, baking until they're crisp, yet still vibrant in color. Once out, they'll continue to crisp up a touch more.
