Ingredients

  • 4 large kiwis
  • 1/2 cup water
  • 1/4 cup granulated sugar (adjust based on sweetness of the kiwis)
  • 1 tablespoon lemon juice

Instructions

  1. Prepare the kiwi (5 minutes):
    • Peel and finely chop two of the kiwis to be mixed into the popsicle molds.
    • Puree the remaining two kiwis in a blender until smooth.
  2. Make the syrup (5 minutes):
    • In a small saucepan, combine the water and sugar. Heat over medium heat, stirring until the sugar has completely dissolved. Remove from heat and let it cool to room temperature.
  3. Mix the popsicle base (2 minutes):
    • Combine the kiwi puree, lemon juice, and cooled syrup in a bowl. Stir well to mix.
  4. Assemble the popsicles (5 minutes):
    • Evenly distribute the chopped kiwi pieces into popsicle molds.
    • Pour the kiwi mixture over the chopped fruit in each mold, leaving a little space at the top as the mixture will expand when it freezes.
  5. Freeze the popsicles (6 hours or overnight):
    • Insert popsicle sticks into each mold. Place the molds in the freezer and freeze until solid, preferably overnight.
  6. Serve (2 minutes):
    • To release the popsicles from the molds, run warm water over the outside of the molds for a few seconds. Gently pull the popsicles out and serve immediately.
