Ingredients
- 4 large kiwis
- 1/2 cup water
- 1/4 cup granulated sugar (adjust based on sweetness of the kiwis)
- 1 tablespoon lemon juice
Instructions
- Prepare the kiwi (5 minutes):
- Peel and finely chop two of the kiwis to be mixed into the popsicle molds.
- Puree the remaining two kiwis in a blender until smooth.
- Make the syrup (5 minutes):
- In a small saucepan, combine the water and sugar. Heat over medium heat, stirring until the sugar has completely dissolved. Remove from heat and let it cool to room temperature.
- Mix the popsicle base (2 minutes):
- Combine the kiwi puree, lemon juice, and cooled syrup in a bowl. Stir well to mix.
- Assemble the popsicles (5 minutes):
- Evenly distribute the chopped kiwi pieces into popsicle molds.
- Pour the kiwi mixture over the chopped fruit in each mold, leaving a little space at the top as the mixture will expand when it freezes.
- Freeze the popsicles (6 hours or overnight):
- Insert popsicle sticks into each mold. Place the molds in the freezer and freeze until solid, preferably overnight.
- Serve (2 minutes):
- To release the popsicles from the molds, run warm water over the outside of the molds for a few seconds. Gently pull the popsicles out and serve immediately.
