  • 2 tablespoons capers, drained
  • 2 tablespoons fresh thyme leaves
  • 3 tablespoons olive oil, divided

  • 1 1/4 cups chicken broth
  • 2 tablespoons chopped fresh parsley for garnish if desired

Instructions

  1. Start by marinating the chicken breasts. In a bowl, combine the lemon juice, capers, fresh thyme leaves, 2 tablespoons of olive oil, salt, and black pepper. Add the chicken breasts to the marinade, making sure they are well coated. Let them marinate for about 10 minutes while you preheat the grill.
  2. Preheat your grill to medium-high heat. Once hot, grill the chicken breasts for about 5-6 minutes per side or until they are cooked through and have a nice grill marks.
