Ingredients

Units Scale

For the falafel patties:

  • 2 cups cooked chickpeas
  • 1/2 cup fresh parsley leaves
  • 1/2 cup fresh cilantro leaves
  • 1 small onion, roughly chopped
  • 4 cloves garlic
  • 2 tablespoons all-purpose flour
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon baking powder
  • Salt and pepper to taste
  • Oil for frying

For the tzatziki sauce:

  • 1 cup Greek yogurt
  • 1 cucumber, grated and squeezed to remove excess moisture
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh dill
  • Salt and pepper to taste

For the assembly:

  • 4 burger buns
  • Lettuce leaves
  • Tomato slices

Instructions

  1. In a food processor, combine the cooked chickpeas, parsley, cilantro, onion, garlic, flour, cumin, coriander, baking powder, salt, and pepper. Pulse until well combined but still slightly chunky. This can also be done with an electric mixer or even by hand if you don’t have a food processor.
  2. Shape the falafel mixture into patties, approximately 2-3 inches in diameter.
  3. Heat oil in a skillet over medium heat. Fry the falafel patties until golden brown and crispy on both sides, about 3-4 minutes per side. Remove from the skillet and drain on paper towels.
  4. Prepare the tzatziki sauce by combining the Greek yogurt, grated cucumber, minced garlic, lemon juice, dill, salt, and pepper in a bowl. Stir well to combine and refrigerate until ready to use.
  5. Lightly toast the burger buns to enhance their flavor and texture.
  6. Assemble the burgers by spreading a generous amount of tzatziki sauce on the bottom half of each bun. Place a falafel patty on top, followed by lettuce leaves and tomato slices. Finish with the top half of the bun.
  7. Serve the homemade Mediterranean falafel burgers immediately and enjoy the explosion of flavors.

Notes

For the best-tasting experience, ensure the falafel mixture is well combined but still has a slightly chunky texture for the best mouthfeel. You can customize your burger toppings by adding sliced red onions, pickles, or roasted red peppers as desired. Serve these delicious Mediterranean falafel burgers with a side of tabouleh, crispy oven-baked sweet potato fries, or a refreshing Greek salad. Enjoy!
