  • Prep Time: 10 minutes
  • Cook Time: 15 minutes
  • Total Time: 25 minutes
  • Yield: 4 burritos 1x

Ingredients

Units Scale
  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup cooked beans (such as black or pinto)
  • 4 large flour tortillas
  • Sour cream for topping
  • Fresh cilantro, chopped (optional)
  • Salsa or hot sauce (optional)

Instructions

  1. In a large skillet, heat some oil over medium-high heat. Add the diced onion and minced garlic and sauté for about 2-3 minutes, until fragrant and translucent.
  2. Add the ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks. This should take around 5 minutes.
  3. Once the beef is cooked, add the chili powder, cumin, paprika, salt, and pepper. Stir well to evenly distribute the spices.
  4. Add the cooked beans to the skillet and stir until everything is well combined. Cook for an additional 2-3 minutes to heat the beans through.
  5. Warm up the flour tortillas in a separate skillet or in the microwave for a few seconds, just until pliable.
  6. Spoon a generous amount of the beef and bean mixture onto each tortilla, slightly off-center. Leave some space around the edges for rolling.
  7. Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom. Repeat with the remaining tortillas and filling.
  8. Heat a clean skillet over medium heat and place the rolled burritos seam side down onto the skillet. Toast each side for about 1-2 minutes, until golden and crispy.
  9. Remove the burritos from the skillet and let them cool slightly before slicing them in half.
  10. Serve the toasted burritos with sour cream, fresh salsa, cilantro, avocado, or any other desired toppings.

Notes

Feel free to customize the filling by adding other ingredients such as diced bell peppers, corn, or jalapeños for an extra kick of flavor. For an even crispier texture, you can brush the outside of the burritos with a little oil or melted butter before toasting them on the skillet. Serve the burritos with a side of Mexican rice, guacamole, or a refreshing side salad to complete the meal. You can make the filling in advance and store it in the refrigerator for a quick and easy meal during the week. Who doesn’t love that!
