  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Using a spoon, scoop out the flesh from the halved eggplant, leaving about 1/2 inch of flesh around the edges to create a “boat.” Chop the scooped-out flesh into small pieces.
  3. Heat olive oil in a skillet over medium heat. Add the minced pork and cook until browned and cooked through, breaking it into small pieces as it cooks.
  4. Add the diced mixed vegetables and chopped eggplant flesh to the skillet. Sauté for a few minutes until the veggies are tender.
  5. Stir in the drained canned diced tomatoes, garlic powder, dried oregano, salt, and pepper. Cook for another 2-3 minutes to combine the flavors.
  6. Carefully spoon the pork and veggie mixture into the eggplant halves, pressing down gently to pack it in.
  7. Place the stuffed eggplant halves on a baking sheet and sprinkle the shredded cheese on top.
  8. Bake in the preheated oven for about 15 minutes or until the eggplant is tender and the cheese is melted and bubbly.
