  • 1/2 cup natural peanut butter
  • 1/4 cup coconut oil, melted
  • 1/4 cup ground flaxseed
  • 1/2 teaspoon vanilla extract
  • Optional: a pinch of salt (if using unsalted peanut butter)
  • Optional for rolling: shredded coconut, cocoa powder, or crushed nuts

Instructions

  1. Soften Dates (10 minutes): If the dates are very dry or hard, soak them in warm water for about 10 minutes to soften. Drain well.
  2. Combine Ingredients (5 minutes): In a food processor, combine the softened dates, rolled oats, peanut butter, melted coconut oil, ground flaxseed, vanilla extract, and a pinch of salt if using unsalted peanut butter. Process until the mixture comes together and forms a dough-like consistency. If the mixture is too dry, add a little more peanut butter or coconut oil. If it’s too wet, add a bit more oats.
  3. Shape Energy Balls (10 minutes): With clean hands, roll the mixture into small balls, about the size of a walnut. If the mixture sticks to your hands, wet them slightly with water or oil for easier rolling.
  4. Optional Coating (5 minutes): Roll the energy balls in shredded coconut, cocoa powder, or crushed nuts for an extra flavor and texture.
  5. Chill and Serve (30 minutes): Place the energy balls on a baking sheet lined with parchment paper and chill in the refrigerator for at least 30 minutes to set. Once firm, transfer them to an airtight container.
  6. Store (1 minute): Store the energy balls in the refrigerator for up to a week or in the freezer for up to a month for longer storage.
