  • Total Time: 20 minutes
  • Yield: 4 tacos (2 servings) 1x

Ingredients

Units Scale
  • 4 small corn or flour tortillas
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 1/2 pound breakfast sausage (links or ground)
  • 2 tablespoons milk
  • Salt and pepper to taste
  • 1 tablespoon butter or cooking oil
  • Optional: Chopped fresh chives for garnish
  • Additional toppings as desired (avocado, pico de gallo, sour cream, jalapenos, etc)

Instructions

  1. In a medium skillet, cook the sausage over medium heat until browned and cooked through. If using sausage links, once cooked, chop them into small bite-sized pieces. Set aside.
  2. In a bowl, whisk together the eggs, milk, salt, and pepper.
  3. In the same skillet, after removing the sausage, melt the butter or add cooking oil. Add the egg mixture, stirring occasionally until the eggs are just set.
  4. Warm the tortillas in a dry skillet or microwave for about 30 seconds.
  5. Assemble the tacos by placing a portion of the scrambled eggs, sausage pieces, and cheese onto each tortilla.
  6. Add any of your favorite toppings (salsa, avocado, sour cream) and enjoy!

Notes

The beauty of these tacos lies in their adaptability. While cheddar is a classic choice, consider switching it up with pepper jack or gouda for a different flavor profile. If you’re looking to add a touch of freshness, a sprinkle of diced tomatoes or a spoonful of pico de gallo can do wonders. For those who appreciate a little heat, a drizzle of your favorite hot sauce or some sliced jalapeños could be a great addition. Enjoy!
