Ingredients

  • 8 oz udon noodles
  • 1 lb flank steak, thinly sliced
  • 2 tbsp vegetable oil
  • 1 red bell pepper, thinly sliced
  • 1 yellow onion, thinly sliced
  • 1 large carrot, thinly sliced.
  • 1/2 cup mushrooms
  • 3 cloves garlic, minced
  • 1 tbsp grated ginger
  • 3 tbsp soy sauce
  • 2 tbsp hoisin sauce
  • 1 tbsp honey
  • 2 tbsp toasted sesame oil
  • 2 tbsp sesame seeds
  • Salt and pepper, to taste

Instructions

  1. Cook the udon noodles according to package instructions. Drain and set aside.
  2. Heat the vegetable oil in a large skillet over medium-high heat. Add the sliced flank steak and cook until browned, about 2-3 minutes per side. Remove the steak from the skillet and set aside.
  3. In the same skillet, add the sliced bell pepper, mushrooms, carrot, and onion. Cook until softened, about 3-4 minutes.
  4. Add the minced garlic and grated ginger to the skillet and cook for an additional 1-2 minutes.
  5. In a small bowl, whisk together the soy sauce, hoisin sauce, honey, toasted sesame oil, and sesame seeds.
  6. Add the steak back to the skillet, along with the cooked udon noodles and the sauce. Toss everything together until well combined.
  7. Season with salt and pepper, to taste.
  8. Serve hot and enjoy!

Notes

To make this dish even more flavorful, you can add some green onions or chopped cilantro as a garnish. If you’re looking for a little bit of spice, add some sriracha or chili flakes to the sauce. I’ll sometimes toss in additional veggies like bok choy or napa cabbage when I have them. Enjoy!
