  • Yield: 2 servings 1x

Ingredients

Units Scale
  • 2 sirloin steaks
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 cup heavy cream
  • 1/2 cup crumbled gorgonzola cheese
  • 1 tablespoon butter
  • Fresh parsley, chopped, for garnish

For the steamed spinach:

  • 4 cups fresh spinach leaves
  • 1 tablespoon butter
  • 1 garlic clove, minced
  • Salt and pepper, to taste

Instructions

  1. Preheat a skillet over medium-high heat and add olive oil.
  2. Season the sirloin steaks with salt and pepper on both sides.
  3. Place the steaks in the skillet and cook to your preferred doneness (about 4-5 minutes per side for medium-rare). Transfer to a plate and cover loosely with foil to keep warm.
  4. In the same skillet, melt the butter and add the heavy cream. Bring to a gentle simmer.
  5. Gradually add the crumbled gorgonzola cheese to the cream, stirring until the cheese is melted and the sauce is smooth. Simmer for a few minutes until the sauce thickens slightly.
  6. Steam the spinach: In a separate skillet, melt butter over medium heat. Add minced garlic and cook for about 1 minute. Add fresh spinach leaves and sauté until wilted. Season with salt and pepper.
  7. Slice the steaks and serve them topped with the gorgonzola sauce and a sprinkle of chopped fresh parsley. Accompany the dish with a generous portion of steamed spinach.

Notes

For an extra depth of flavor, consider adding a splash of dry white wine to the gorgonzola sauce while it simmers. Allow the steaks to rest for a few minutes before slicing to ensure juiciness. Experiment with different greens for the side – sautéed broccoli or roasted asparagus are also excellent options. Serve this dish with a glass of rich red wine for a well-rounded experience. Enjoy!
