Ingredients

Units Scale
  • 8 ounces (225g) lo mein noodles or spaghetti
  • 1 cup broccoli florets
  • 1 zucchini, thinly sliced
  • 2 tablespoons sesame oil
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce
  • 1/4 cup creamy peanut butter
  • 2 tablespoons sriracha sauce (adjust according to your spice preference)
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1/4 cup water
  • Sesame seeds, for garnish
  • Chopped green onions, for garnish
  • Chopped peanuts, for garnish
  • Extra sriracha, for drizzling
  • Lime wedges for serving

Instructions

  1. Cook the lo mein noodles or spaghetti according to the package instructions until al dente. Add the broccoli florets and sliced zucchini to the boiling water during the last 2 minutes of cooking. Drain and set aside.
  2. In a large skillet or wok, heat the sesame oil over medium-high heat. Add the minced garlic and stir-fry for about 30 seconds until fragrant.
  3. Lower the heat to medium and add the soy sauce, creamy peanut butter, sriracha sauce, honey or maple syrup, rice vinegar, and water to the skillet. Stir the sauce until it is smooth and well combined. Cook for an additional 2-3 minutes until the sauce thickens slightly.
  4. Toss the cooked noodles, broccoli, and zucchini in the spicy peanut butter sauce until everything is evenly coated.
  5. Serve the Spicy Thai Peanut Butter Lo Mein Noodles in individual bowls. Garnish with sesame seeds, chopped green onions, chopped peanuts, and a drizzle of extra sriracha for an added kick.

Notes

For a heartier version, you can add grilled chicken, tofu, or shrimp to the dish. Feel free to include other favorite vegetables like bell peppers, bean sprouts, or baby corn for more variety. If you prefer a milder taste, reduce the amount of sriracha and adjust the spiciness to your liking. Pair this dish with a side of fresh cucumber salad or Thai spring rolls for a complete meal. Enjoy!
