  • 1/2 cup chicken or vegetable broth
  • 1/2 cup grated Parmesan cheese

Instructions

  1. In a bowl, pour the boiling water over the dried porcini mushrooms and let them soak for 15 minutes. Once rehydrated, drain the mushrooms and reserve the soaking liquid.
  2. Meanwhile, cook the tagliatelle pasta according to the package instructions until al dente. Drain and set aside.
  3. In a large skillet, melt the butter with olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until softened and fragrant.
  4. Add the rehydrated porcini mushrooms to the skillet and cook for a few minutes until they release their flavors.
  5. Pour in the reserved mushroom soaking liquid, chicken or vegetable broth, and heavy cream. Stir and let it simmer for 5 minutes until the sauce thickens slightly.
  6. Add the cooked tagliatelle pasta to the skillet and toss it in the creamy sauce until well coated.
  7. Stir in the grated Parmesan cheese, season with salt and pepper to taste, and let it cook for an additional 2 minutes to marry the flavors.
