Units Scale

For the meatloaf:

  • 1 pound ground turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped bell pepper
  • 1/4 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 egg
  • Fresh herbs for garnish

For the mashed potatoes:

  • 4 large potatoes, peeled and cubed
  • 2 tablespoons butter
  • 1/4 cup milk
  • Salt and pepper to taste
  • Any additional toppings such as shredded cheese or bacon bits

For the green beans:

  • 1 pound fresh green beans, trimmed
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine the ground turkey, breadcrumbs, milk, chopped onion, chopped bell pepper, ketchup, Worcestershire sauce, dried thyme, garlic powder, salt, black pepper, and the egg.
  3. Mix all the ingredients until well combined.
  4. Shape the mixture into a loaf shape and place it in a baking dish.
  5. Bake the meatloaf in the preheated oven for 25-30 minutes, or until it’s cooked through and the top is nicely browned.
  6. While the meatloaf is baking, place the peeled and cubed potatoes in a pot of salted water. Bring it to a boil and cook until the potatoes are tender, about 15 minutes.
  7. Drain the potatoes and return them to the pot.
  8. Add the butter and milk to the pot and mash the potatoes until smooth. Season with salt and pepper to taste. Keep warm until serving.
  9. In a large skillet, heat the olive oil over medium-high heat.
  10. Add the minced garlic and sauté for about 1 minute, or until fragrant.
  11. Add the trimmed green beans to the skillet and sauté for 5-7 minutes, or until they are tender-crisp. Season with salt and pepper.
  12. When ready to plate, slice the cooked turkey meatloaf into thick slices.
  13. Serve the sliced meatloaf with a generous portion of mashed potatoes and green beans on the side. Add any juices from the meatloaf pan to your plate, if desired.
  14. Garnish with fresh herbs and enjoy!

Notes

Opt for lean ground turkey for a healthier meatloaf. It has less fat compared to other meats, making the dish lighter. To ensure your meatloaf stays moist, don’t overmix the ingredients. Overmixing can lead to a dense and dry texture. Mix the ingredients until they are just combined for a tender result. Take your mashed potatoes to the next level by adding roasted garlic, sour cream, or grated Parmesan cheese. These additions will make your mashed potatoes creamier and more flavorful. Enjoy!
