Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers in a baking dish and set aside.
  3. In a skillet over medium heat, cook the chorizo sausage, breaking it up into small crumbles, until browned and cooked through, about 5 minutes. Remove from the skillet and set aside.
  4. In the same skillet, add the diced onion, diced tomatoes, minced garlic, smoked paprika, cumin, salt, and pepper. Sauté until the onions are translucent and the flavors are well combined, about 3 minutes.
  5. Return the cooked chorizo to the skillet and add the cooked rice. Stir to combine all the ingredients and cook for an additional 2 minutes.
