This delicious spinach and mushroom risotto dish is perfect when you’re craving something comforting. Ingredients
- 6 cups vegetable or chicken broth
- 3 tablespoons unsalted butter
- 1 large onion, diced
- 1 lb. cremini mushrooms, sliced
- 2 cloves garlic, minced
- 2 cups Arborio rice
- 1/2 cup dry white wine
- 4 cups fresh baby spinach leaves
- 1/2 cup freshly grated Parmesan cheese
- Salt and freshly ground black pepper, to taste
Instructions
- In a medium pot, bring the broth to a simmer and keep warm over low heat.
- In a large saucepan, melt 2 tablespoons of butter over medium heat. Add the onions and cook until softened, stirring occasionally, about 5 minutes.
- Add the mushrooms and garlic and cook until the mushrooms are softened, stirring occasionally, about 8-10 minutes.
- Add the Arborio rice and stir to coat the grains with the butter. Add the white wine and cook, stirring constantly, until the wine is absorbed by the rice.
- Add 1/2 cup of the warm broth to the rice and cook, stirring constantly, until the broth is absorbed. Repeat, adding 1/2 cup of broth at a time, stirring constantly and letting each addition of broth be absorbed before adding the next. Cook until the rice is tender and creamy, about 20-25 minutes.
- Stir in the remaining 1 tablespoon of butter, spinach, and Parmesan cheese. Season with salt and pepper to taste.
- Serve immediately, garnished with additional Parmesan cheese and fresh herbs if desired.

I typically make this dish in the fall or winter when I’m craving something creamy and comforting but, really, it’s delicious all year round. To make this dish even more nutritious, you can add extra veggies or substitute vegetable broth for chicken broth.
