- Total Time: 30 minutes
- Yield: 4 stuffed pork chops 1x
Ingredients
- 4 thick-cut pork chops
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 cup diced apples (such as Granny Smith)
- 1/2 cup diced onions
- 2 cloves garlic, minced
- 1/2 cup breadcrumbs
- 1/4 cup chopped fresh parsley
- 1 teaspoon dried thyme
- 1/2 teaspoon dried sage
- 1/4 cup chicken broth
- 2 tablespoons butter
- 1 tablespoon maple syrup
- 1 tablespoon balsamic vinegar
Instructions
- Preheat your oven to 375°F (190°C).
- Carefully slice a pocket into each pork chop, making sure not to cut all the way through. Season the inside of each pocket with salt and pepper.
- In a skillet over medium heat, heat the olive oil. Add the diced apples, onions, and minced garlic. Cook until the apples are softened and the onions are translucent.
- Remove the skillet from heat and stir in the breadcrumbs, chopped parsley, dried thyme, dried sage, and chicken broth. Mix until well combined.
- Stuff each pork chop pocket with the apple and herb mixture.
- In the same skillet over medium-high heat, sear the stuffed pork chops for about 2 minutes on each side until nicely browned.
- Transfer the skillet to the preheated oven and bake the pork chops for about 8-10 minutes until cooked through.
- While the pork chops are baking, prepare the dressing. In a small saucepan, melt the butter and stir in the maple syrup and balsamic vinegar. Cook for a few minutes until the dressing is heated through.
- Serve the stuffed pork chops with the warm dressing drizzled on top.
Notes
To save time on chopping, you can use pre-sliced apples available at the grocery store. For added crunch, feel free to toss in some toasted walnuts or pecans into the apple and herb stuffing mixture. If you prefer a sweeter dressing, you can add a touch more maple syrup to the apple dressing. Pair this dish with roasted vegetables like Brussels sprouts, creamy polenta, or sweet potatoes for a hearty and well-balanced meal.
