  • 1 tsp ground coriander
  • 1/2 tsp chili powder (adjust to taste)
  • 1 can (14 oz) diced tomatoes
  • 3 cups vegetable broth
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish
  • Cooked white rice, for serving

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onions and sauté until they turn translucent.
  2. Stir in minced garlic, ground cumin, turmeric, coriander, and chili powder. Sauté for another minute until fragrant.
  3. Add red lentils, diced tomatoes, and vegetable broth. Bring to a boil, then reduce the heat and let it simmer for about 15-20 minutes until the lentils are cooked and tender.
  4. Add cauliflower florets to the pot and continue to simmer for an additional 10 minutes until the cauliflower is tender.
  5. Fold in the fresh spinach and cook until wilted.
  6. Season the dahl with salt and pepper to taste.
  7. Serve the dahl over cooked white rice and garnish with fresh cilantro.

Notes
