Ingredients

Units Scale
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 bell peppers, diced
  • 2 carrots, diced
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 2 cans (15 oz each) mixed beans (kidney, black, pinto), drained and rinsed
  • 1 cup vegetable broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon oregano
  • Salt and pepper, to taste
  • Grated cheddar cheese, for topping
  • Sliced scallions, for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add diced onion, bell peppers, and carrots. Sauté for about 5 minutes, until vegetables start to soften.
  3. Stir in minced garlic and cook for an additional 1 minute.
  4. Add diced tomatoes (with their juices), mixed beans, vegetable broth, chili powder, cumin, paprika, oregano, salt, and pepper.
  5. Bring the chili to a simmer and let it cook for about 15-20 minutes, allowing the flavors to meld.
  6. Taste and adjust seasonings if needed.
  7. Ladle the chili into bowls and top with grated cheddar cheese and sliced scallions.
  8. Serve hot and enjoy!

Notes

For a creamier texture, consider mashing some of the beans with a fork while the chili simmers. Feel free to customize with your favorite toppings – avocado, sour cream, or even a dash of hot sauce. If you’re meal-prepping, this chili freezes beautifully for future cravings. Pair with freshly made cornbread or oyster crackers for a complete meal and enjoy!
