Imagine a meal that’s as delightful to make as it is to eat. Enter the savory skillet Dutch Baby, a pancake-like creation that puffs up beautifully in the oven, creating a crispy, golden-brown shell. In this recipe, we’re taking the traditional Dutch Baby up a notch by topping it with smoked salmon, fresh arugula, and melted mozzarella cheese. Yum!

  • Prep Time: 10 minutes
  • Cook Time: 15-18 minutes
  • Total Time: 25-28 minutes
  • Yield: 4 servings 1x

Ingredients

Units Scale

For the Dutch baby:

  • 3 large eggs
  • 2/3 cup all-purpose flour
  • 2/3 cup milk
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter
  • 1/4 cup shredded mozzarella cheese

For the topping:

  • 4 oz smoked salmon
  • 1 cup fresh arugula
  • 1/4 cup shredded mozzarella cheese (additional)

Instructions

  1. Preheat the Oven: Preheat your oven to 425°F (220°C). Place a 10-inch ovenproof skillet or a cast-iron skillet in the oven as it heats.
  2. Prepare the Batter: In a blender, combine the eggs, flour, milk, and salt. Blend until the batter is smooth.
  3. Heat the Skillet: Carefully remove the hot skillet from the oven. Add the butter to the skillet, swirling it to coat the bottom evenly. Pour the batter into the skillet.
  4. Bake: Place the skillet back in the oven and bake for about 15-18 minutes, or until the Dutch Baby is puffed up and the edges are golden brown.
  5. Add Cheese: About 2 minutes before the Dutch Baby is done, sprinkle the shredded mozzarella cheese evenly over the top, allowing it to melt and become bubbly.
  6. Assemble: Remove the Dutch Baby from the oven. Top it with smoked salmon slices, fresh arugula, and an additional sprinkle of shredded mozzarella cheese if desired.
  7. Serve: Slice the Dutch Baby into wedges and serve immediately while it’s hot and puffy.

Notes

Be cautious when removing the skillet from the oven, as it will be very hot. Feel free to customize your toppings with ingredients like capers, red onion slices, or a dollop of crème fraîche. Dutch Babies are extremely versatile, so feel free to experiment with different toppings like fresh herbs or sautéed mushrooms. Enjoy your meal!
