Ingredients

  • 1 tbsp olive oil
  • 4 cups mixed greens (arugula, spinach, kale)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/2 cup feta cheese, crumbled
  • 3 tbsp pesto (store-bought or homemade)

Instructions

  1. Season chicken breasts with salt and pepper on both sides.
