- Cook Time: 20 minutes
- Total Time: 25 minutes
- Yield: 4 servings 1x
Ingredients
- 4 boneless, skinless chicken breasts, pounded thin
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 3 tablespoons olive oil
- 3 garlic cloves, minced
- 1/2 cup dry white wine
- 1/2 cup chicken broth
- 1/2 cup sun-dried tomatoes, chopped
- 1/2 cup heavy cream
- 2 cups fresh spinach
- 8 oz spaghetti
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Start by cooking spaghetti according to package instructions, and then set aside.
- In a shallow bowl, mix together flour, salt, pepper, and paprika. Coat each chicken breast in the mixture, shaking off any excess flour.
- Heat olive oil in a large skillet over medium heat. Cook the chicken for 4-5 minutes per side until golden brown and cooked through. Transfer the chicken to a plate and cover with foil.
- In the same skillet, add minced garlic and cook until fragrant, about 30 seconds. Add the white wine and chicken broth, scraping the bottom of the skillet to release any brown bits. Simmer for 2-3 minutes, then stir in the chopped sun-dried tomatoes.
- Add the heavy cream and stir to combine. Add the spinach to the skillet and cook until wilted, about 1-2 minutes. Season with salt and pepper to taste.
- To serve, place cooked spaghetti on a plate, top with a chicken breast, and spoon the sauce over the top. Sprinkle with grated Parmesan cheese and serve immediately.
Notes
Be sure to use a dry white wine such as Pinot Grigio or Sauvignon Blanc, as it will give the dish a bright and acidic flavor. You can also adjust the amount of cream and chicken broth to your desired consistency. If you prefer, chicken thighs make a great substitute to chicken breasts in this dish as well. Enjoy!
