There’s a certain magic that happens when pork simmers in the beloved Filipino Adobo sauce. It’s a dance of tangy vinegar, rich soy sauce, and aromatic garlic that envelops the tender meat. Adobo Pork stands out not only for its depth of flavor but for its simplicity. With just a handful of ingredients, this dish transforms into something memorable. And guess what? Even if you’re pressed for time, you can enjoy this classic Filipino comfort food.

Ingredients

Units Scale
  • 1.5 lbs of pork belly, cut into 2-inch cubes
  • 3/4 cup white vinegar
  • 1/2 cup soy sauce
  • 1 cup water
  • 56 garlic cloves, smashed
  • 3 bay leaves
  • 1 tsp black peppercorns
  • 1 tbsp vegetable oil
  • 1 tsp sugar (optional, for balance)

Instructions

  1. In a large bowl, marinate pork pieces in vinegar, soy sauce, garlic, and black peppercorns. Allow it to sit for at least 15 minutes.
  2. In a large skillet or pot, heat vegetable oil over medium heat.
  3. Add the marinated pork pieces (reserving the marinade) and sear each side until lightly browned.
  4. Pour in the reserved marinade and add water, bay leaves, and sugar.
  5. Bring it to a boil, then reduce the heat to low, cover, and let it simmer until the pork is tender and the sauce has reduced slightly.
  6. Remove the bay leaves before serving and enjoy!

Notes

Filipino Adobo Pork truly shines when served over a bed of steamed white rice which soaks up that delectable sauce. For a tangy side, consider pickled green papaya or “atchara.” When reheating leftovers, a quick splash of water can help revive the sauce’s original consistency. And here’s a tip: the longer this dish sits, the deeper the flavors meld, making it even better the next day. So, enjoy it fresh, and look forward to any leftovers!
