  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional, for heat)
  • 1 cup sweet potatoes, peeled and diced
  • 1 cup okra, sliced
  • 2 cups greens (such as spinach, kale, or collard greens), chopped
  • 1/2 cup creamy peanut butter
  • 4 cups chicken broth

Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional 1 minute.
  2. Add the chicken pieces to the pot and cook until browned on all sides, about 5 minutes. Stir in the ground cumin, ground coriander, paprika, and cayenne pepper (if using), and cook for 1 minute to toast the spices and enhance their flavors.
  3. Add the diced sweet potatoes, sliced okra, and chopped greens to the pot. Stir in the creamy peanut butter until it melts and coats the ingredients.
  4. Pour in the chicken broth, season with salt and pepper to taste, and bring the stew to a boil. Once boiling, reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the chicken is cooked through and the vegetables are tender.
