- Yield: 4 servings 1x
Ingredients
- 1 pound boneless, skinless chicken breasts, diced
- 2 tablespoons soy sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon grated ginger
- 2 cloves garlic, minced
- Salt and pepper to taste
- 1/4 cup peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1/2 teaspoon grated ginger
- 1 clove garlic, minced
- 2–3 tablespoons water (to thin the sauce)
- Large lettuce leaves (such as Bibb or Romaine)
- 1 cup grated carrots
- 1/2 cup chopped scallions
- Chopped peanuts, for garnish (optional)
- Fresh cilantro, for garnish (optional)
Instructions
- In a bowl, whisk together the soy sauce, hoisin sauce, rice vinegar, sesame oil, grated ginger, minced garlic, salt, and pepper. Add the diced chicken and marinate for 10 minutes.
- While the chicken is marinating, prepare the peanut sauce by combining peanut butter, soy sauce, honey, rice vinegar, sesame oil, grated ginger, minced garlic, and water in a bowl. Stir until smooth and set aside.
- Heat a skillet or wok over medium-high heat. Add the marinated chicken and cook for about 5-7 minutes until cooked through and golden brown. Remove from heat.
- To assemble the lettuce wraps, take a lettuce leaf and place a spoonful of cooked chicken in the center. Top with grated carrots, chopped scallions, chopped peanuts (if desired), and fresh cilantro. Drizzle with the peanut sauce.
- Serve the Asian chicken lettuce wraps immediately and enjoy!
Notes
To save time, you can use pre-cooked rotisserie chicken and simply toss it with the marinade to infuse it with flavor. Feel free to customize the peanut sauce by adding a dash of sriracha or chili sauce for a spicy kick. For an extra burst of freshness, squeeze a bit of lime juice over the assembled lettuce wraps before serving. You can also experiment with different toppings such as sliced cucumber, bean sprouts, or chopped fresh mint leaves for added texture and flavor. Yum!
