  • Yield: 4 servings 1x

Ingredients

Units Scale
  • 4 slices bacon, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 cups frozen corn kernels
  • 2 medium potatoes, peeled and diced
  • 4 cups chicken or vegetable broth
  • 1 cup milk or heavy cream
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Fresh chives or parsley, chopped (for garnish)

Instructions

  1. In a large pot, cook the chopped bacon over medium heat until crispy. Remove the bacon and set it aside, leaving the bacon grease in the pot.
  2. In the same pot, add the diced onion and cook until softened and translucent.
  3. Stir in the minced garlic and cook for about 30 seconds until fragrant.
  4. Add the frozen corn kernels and diced potatoes to the pot. Cook for a few minutes, allowing the flavors to meld.
  5. Pour in the chicken or vegetable broth and bring the mixture to a simmer. Let it cook until the potatoes are tender.
  6. Use an immersion blender to partially puree the soup, leaving some chunks for texture.
  7. Stir in the milk or heavy cream and dried thyme. Season with salt and pepper to taste.
  8. Let the chowder simmer for a few more minutes to allow the flavors to meld.
  9. Ladle the chowder into bowls, topping each portion with the crispy bacon bits and a sprinkle of fresh chives or parsley.

Notes

To enhance the chowder’s texture, you can reserve a handful of cooked corn kernels and add them back in at the end. Adjust the thickness of the chowder by adding more or less milk/cream to suit your taste. Be sure not to overcook the potatoes to maintain their texture. This chowder pairs wonderfully with crusty bread or oyster crackers for a complete meal. Enjoy!
