  • 1 cup heavy cream

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, melt the butter over medium heat. Add the minced garlic and sliced mushrooms. Sauté for about 5 minutes until the mushrooms are tender.
  3. Stir in the fresh spinach and cook until wilted, which should take approximately 2-3 minutes.
  4. Reduce the heat to low and add the four grated cheeses (Parmesan, mozzarella, Asiago, and Fontina) to the skillet. Stir until the cheeses are melted and combined.
  5. Pour in the heavy cream and gently stir until the sauce thickens and coats the back of a spoon. This should take about 3-5 minutes.
  6. Season the sauce with salt and pepper to taste.
  7. Return the cooked pasta to the skillet. Toss everything together until the pasta is well coated with the creamy cheese sauce and the spinach and mushrooms are evenly distributed.
