Instructions

  1. Preheat your oven to 375°F (190°C). While it’s heating, season the pork tenderloin with salt and black pepper.
  2. In a large ovenproof skillet, heat the olive oil over medium-high heat. Wrap the seasoned pork tenderloin with bacon strips, securing the ends with toothpicks. Place it in the skillet and sear until the bacon is golden brown on all sides, about 3-4 minutes per side.
  3. Transfer the skillet to the preheated oven and roast the pork for about 15-20 minutes, or until it reaches an internal temperature of 145°F (63°C) for medium-rare or 160°F (71°C) for medium. Remove it from the oven and let it rest for a few minutes.
  4. While the pork rests, in a small saucepan, warm the raspberry preserves over low heat. Stir in the red wine vinegar and Dijon mustard. Simmer for a few minutes until the mixture is smooth and slightly thickened.
  5. Remove the toothpicks from the pork, slice it into medallions, and arrange them on serving plates. Drizzle the raspberry vinaigrette over the pork. If desired, garnish with fresh rosemary or thyme.
