Ingredients

Units Scale

For the salad:

  • 2 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1/2 cup BBQ sauce
  • 4 cups mixed greens or your preferred lettuce
  • 2 hard-boiled eggs, sliced
  • 1 cup cherry tomatoes, halved
  • 2 ears of corn, husked
  • 1 avocado, sliced
  • Fresh cilantro leaves, for garnish

For the creamy avocado ranch dressing:

  • 1 ripe avocado
  • 1/4 cup Greek yogurt
  • 1/4 cup buttermilk
  • 1 tablespoon fresh lime juice
  • 1 teaspoon dried dill
  • Salt and pepper, to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. Season the chicken breasts with salt and pepper, then brush them with BBQ sauce.
  3. Husk the corn and place it on the grill along with the chicken. Grill both for about 6-7 minutes per side, until the chicken is fully cooked and the corn is slightly charred.
  4. Remove the chicken from the grill and let it rest for a few minutes before slicing into thin strips.
  5. While the chicken rests, carefully slice the charred corn kernels off the cob.
  6. Prepare the creamy avocado ranch dressing: Blend the avocado, Greek yogurt, buttermilk, lime juice, dried dill, salt, and pepper until smooth and creamy.
  7. In a large bowl, arrange the mixed greens. Top with sliced BBQ chicken, hard-boiled egg slices, cherry tomato halves, grilled corn kernels, and avocado slices.
  8. Drizzle the creamy avocado ranch dressing generously over the salad.
  9. Garnish the salad with fresh cilantro leaves.
  10. Serve immediately and enjoy!

Notes

Make sure you preheat the grill adequately to achieve those appealing grill marks on both the chicken and corn. Feel free to add a sprinkle of crumbled bacon or blue cheese to this salad for an extra burst of flavor. You can also adjust the dressing’s consistency by adding more buttermilk if desired. Accompany the dish with warm garlic bread for a wholesome meal. Enjoy!
