Ingredients

Units Scale
  • 4 bone-in pork chops
  • 1/2 cup of your favorite BBQ sauce
  • 4 medium potatoes, cut into wedges or slices
  • 1 bunch asparagus, trimmed
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • Chopped fresh parsley, for garnish

Instructions

  1. Preheat the grill to medium-high heat. Season the pork chops with salt and black pepper on both sides.
  2. Place the pork chops on the grill and cook for about 4-5 minutes on each side, or until they reach an internal temperature of 145°F (63°C).
  3. Brush each pork chop generously with BBQ sauce during the last few minutes of grilling. Remove from the grill and let them rest for a few minutes.
  4. While the pork chops are grilling, preheat the oven to 425°F (220°C).
  5. In a bowl, toss the potatos with olive oil, salt, and black pepper. Spread them in a single layer on a baking sheet and roast for about 20-25 minutes, or until they’re crispy and golden.
  6. On another baking sheet, arrange the trimmed asparagus in a single layer. Drizzle with olive oil, sprinkle with salt and black pepper, and roast for about 10-12 minutes, or until tender and slightly crispy.
  7. Serve the grilled BBQ pork chops alongside the roasted potatoes and asparagus. Garnish with chopped fresh parsley for a burst of color and flavor.

Notes

Choose your favorite BBQ sauce to infuse your pork chops with the desired level of tangy sweetness. Or if you have time, you can make your own BBQ sauce for extra flavor. For a little kick, sprinkle red pepper flakes on the potatoes or asparagus before roasting. Pair this meal with a simple green salad or coleslaw to add a refreshing contrast to the flavors. Enjoy!
