  • Total Time: 30 minutes
  • Yield: 4 servings 1x

Ingredients

Units Scale
  • 1 can (15 oz) refried beans
  • 1 cup shredded cheddar cheese
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • 12 small corn tortillas
  • Vegetable oil for frying
  • Additional shredded cheese
  • Guacamole (homemade or store-bought)
  • Lime wedges

For the fresh tomato salsa:

  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1 small jalapeño, seeds removed and finely chopped (optional for heat)
  • 1 tablespoon fresh lime juice
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, mix the refried beans, shredded cheddar cheese, ground cumin, chili powder, salt, and pepper until well combined.
  2. Warm the corn tortillas slightly to make them easier to roll. You can do this by wrapping them in a damp paper towel and microwaving them for 20-30 seconds.
  3. Place a spoonful of the bean and cheese mixture onto the bottom edge of a tortilla. Roll it tightly, securing the filling inside. Repeat this step until all the tortillas are filled.
  4. In a large skillet, heat enough vegetable oil over medium-high heat for shallow frying.
  5. Once the oil is hot, carefully place the taquitos seam side down in the skillet. Fry them in batches, making sure not to overcrowd the pan. Cook until they turn golden brown and crispy on all sides, about 2-3 minutes per side.
  6. Remove the taquitos from the skillet and place them on a plate lined with paper towels to drain any excess oil.
  7. To make the Fresh Tomato and Onion Salsa, simply combine the diced tomatoes, diced red onion, chopped cilantro, jalapeño (if using), fresh lime juice, salt, and pepper in a bowl. Mix well and adjust seasonings to your liking.
  8. Serve the Bean and Cheese Taquitos topped with the Fresh Tomato and Onion Salsa, a hearty dollop of guacamole, and additional shredded cheese. Squeeze fresh lime juice over the taquitos for an extra burst of flavor.

Notes

Feel free to customize the taquitos by adding your favorite toppings like sour cream, sliced black olives, shredded lettuce, corn, or jalapeño. For a healthier version, you can bake the taquitos in the oven. Simply preheat the oven to 425°F (220°C), place the taquitos on a baking sheet, and bake for about 15-20 minutes or until crispy. Pair these taquitos with a refreshing side salad or Mexican rice for a complete meal. Enjoy!
