- Cook Time: 65 minutes
- Total Time: 1 hour, 15 minutes
- Yield: 6 servings 1x
Ingredients
- 1 head of garlic, for roasting
- 2 tablespoons olive oil
- 1 pound chicken breast, diced
- Salt and pepper, to taste
- 1 cup mushrooms, sliced
- 1 onion, diced
- 6 cups chicken broth
- 1 cup alfredo sauce
- 8 lasagna noodles, broken into pieces
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- Fresh parsley, for garnish
Instructions
- Roast Garlic (40 minutes): Preheat the oven to 400°F (200°C). Cut the top off the head of garlic, drizzle with olive oil, wrap in foil, and roast until golden and soft.
- Cook Chicken (10 minutes): While the garlic is roasting, heat olive oil over medium heat in a large pot. Season chicken with salt and pepper, and cook until browned. Remove and set aside.
- Sauté Vegetables (10 minutes): In the same pot, add more oil if needed and sauté the mushrooms and onions until tender.
- Prepare Soup (25 minutes): Squeeze the roasted garlic out of its skin and mash. Add to the pot along with the chicken broth, alfredo sauce, and broken lasagna noodles. Bring to a boil, then reduce to a simmer until the noodles are tender.
- Add Chicken and Cheese (5 minutes): Return the cooked chicken to the pot. Stir in the mozzarella and Parmesan cheese until melted and well combined.
- Serve (5 minutes): Garnish with fresh parsley and additional cheese if desired. Serve hot.
Notes
For an extra flavor punch, consider adding a dash of nutmeg or a sprinkle of red pepper flakes to the soup. Adjusting the cheese ratio lets you play with the creaminess and flavor depth of your soup. A crunchy, garlicky baguette on the side or a fresh green salad can elevate the meal by adding different textures and freshness. A glass of your favorite white wine or a light, crisp beer can complement the richness of the dish wonderfully. Enjoy your meal!
