  • 8 lasagna noodles, broken into pieces
  • 1 cup mozzarella cheese, shredded

Instructions

  1. Roast Garlic (40 minutes): Preheat the oven to 400°F (200°C). Cut the top off the head of garlic, drizzle with olive oil, wrap in foil, and roast until golden and soft.
  2. Cook Chicken (10 minutes): While the garlic is roasting, heat olive oil over medium heat in a large pot. Season chicken with salt and pepper, and cook until browned. Remove and set aside.
  3. Sauté Vegetables (10 minutes): In the same pot, add more oil if needed and sauté the mushrooms and onions until tender.
  4. Prepare Soup (25 minutes): Squeeze the roasted garlic out of its skin and mash. Add to the pot along with the chicken broth, alfredo sauce, and broken lasagna noodles. Bring to a boil, then reduce to a simmer until the noodles are tender.
  5. Add Chicken and Cheese (5 minutes): Return the cooked chicken to the pot. Stir in the mozzarella and Parmesan cheese until melted and well combined.
  6. Serve (5 minutes): Garnish with fresh parsley and additional cheese if desired. Serve hot.
